Instructions:

  1. Prepare the Marinade:
  • In a medium bowl, combine the olive oil, lemon juice, chopped fresh dill, and salt. Stir well to create a uniform marinade.
  1. Marinate the Salmon:
  • Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fillets, ensuring they are well-coated.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to infuse into the salmon.
  1. Preheat the Grill:
  • Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
  1. Grill the Salmon:
  • Remove the salmon from the marinade, allowing any excess to drip off.
  • Place the fillets on the grill, skin side down. Grill for about 6-8 minutes, depending on the thickness of the fish, without moving them to ensure the skin becomes crispy.
  • Carefully flip the fillets and grill for an additional 2-3 minutes, or until the salmon is cooked to your desired level of doneness. I suggest using a thermometer and taking it off the grill when the internal temperature reaches 125- 135 degrees Fahrenheit.
  1. Serve:
  • Remove the salmon from the grill and let it rest for a minute or two.
  • Serve the fillets with additional fresh dill sprinkled on top and lemon wedges on the side for squeezing over the fish.

Grilling Tip:

  • Patience is Key: Letting the salmon cook skin side down for the majority of the time helps achieve that perfect crispy texture.
